Cupcakes with White chocolate icing..yes please!




Today being my birthday, I knew I did not want a store bought cake. 
You know the kind with that heavy thick sugar icing on it. 

So I decided I wanted to make my own. Well, make cupcakes that is. 
 So here is my easy recipe for my Birthday cupcakes with white chocolate icing...

It is real hard now so follow along..

I made a white cake as directed on the box. I know HARD right!
Any brand will do. I wanted a white cake to keep it a little lighter in calories...
haha as if!

so I baked my cupcakes in cute black and white paper cups I found.
So far easy right?

Once done, I took them out and let them cool COMPLETELY.

The box mix I used made 24 large cupcakes.

ok now for the icing.
yummmmm

1(one) 4oz pkg of pudding (instant-any flavor), 
1 cup of milk. 
Mix till it starts to get firm 
then fold in  (lightly mix by hand) 1 tub of *cool whip. 
(I used reg cool whip, but I am sure you could use the extra creamy kind)
I put it in a zip loc baggie and cut the corner to ice my cupcakes. 
Easy peaszy and lite.
 Not sooo heavy like regular icing.

On top I actually shredded some Choc Almond bark using my carrot grater.
 I wanted to use the white choc Almond bark but I didn't have any on hand. 

*If you don't like cool whip then make your own whipped topping with some heavy whipping cream.
Whip till fluffy then fold into the pudding/milk mixture. 

Soo good.

Chicken With Mushrooms for dinner

Chicken With Mushrooms

 Ingredients

  • 3 cups sliced mushrooms
  • 4 skinless, boneless chicken breast halves or chicken tenders
  • 2 eggs, beaten
  •  1/2 a chopped onion
  • 1 tablespoon of minced garlic
  • 1 cup seasoned bread crumbs
  • 2 tablespoons butter
  • 6 ounces mozzarella cheese or other cheese of your liking
  • 3/4 cup chicken broth

 Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2.  Sauteed the mushrooms  and onion in some olive oil with garlic
  3.  In a bowl or a pot you want to add your chicken broth and cream of mushroom, mix
  4. Place half of the sauteed mushrooms mixture in a 9x13 inch pan . Dip chicken into beaten eggs, then roll in bread crumbs.
  5. In skillet, melt butter over medium heat. Brown both sides of chicken in skillet. Place chicken on top of mushrooms, Add chicken broth/mushroom soup to pan. Then add remaining mushrooms on chicken. 
  6. Bake in preheated oven for 30 to 35 minutes, or until chicken is no longer pink and juices run clear. 
  7. Last 5 mins top with mozzarella cheese. 

    Serve over cooked rice or noodles of choice.

FUN Salt/Cinnamon Dough Ornament Recipe's

Thought I would share a couple recipes for making Salt Dough ornaments. 
I know there are a ton of recipes on the net, but these are my own tested and my "turn to" recipes for great Ornies every time. 
These are easy to make and should give you a good starting point from which to generate your own ideas.


Salt Dough Recipe

What you need:
2 cups all-purpose flour
1 cup salt
1 cup cold water
OPTIONAL
1 tablespoon of vegetable oil (makes it a little easier to knead)
1 tablespoon of wallpaper paste (gives the mixture more elasticity)
1 tablespoon of lemon juice (makes the finished product harder)

Directions: 
In a large bowl, mix table salt and flour together any, or all, of the optional ingredients. Gradually add 1/2 cup of water and mix to desired consistency. Knead the dough on a flat surface for 10 minutes to help create a smooth texture. If possible it is best to let the dough stand for approximately twenty minutes
before beginning a project. , adding a few more drops of water as needed (but not making it too moist). **This should be neither too sticky, in whichcase add more flour, nor too dry, in which case add more water. 
Once the dough is made, you can divide it up into small portions to roll into 1/8" thick pieces with a rolling pin. Use cookie cutters to cut out a variety of shapes, and place the shapes on wax paper or other surface to dry. If you want to make hanging ornaments, pierce the dough through with a toothpick while it's wet.

Allow the shapes to dry for a day or two, turning them over periodically to speed up the drying process. You may need to re-pierce the hole several times during the drying process. After the shapes dry, you can use a fine grit sandpaper to gently smooth any rough edges.

Baking Alternative
Instead of allowing the dough shapes to air dry, you can bake them in the oven at 200 degrees F until hard. Baking times varies depending on oven and dough thickness. Make sure the dough is completely baked. You can cover the dough with aluminum foil if it starts to darken before completely baked through. Be sure to turn your shaped over when baking :)

*Unused dough can be stored in the fridge, in an airtight container or cling film, for up to a week.

    Primitive Cinnamon Dough recipe 
(I love this one)
what you need:
1/2 cup ground cinnamon
1/3 cup applesauce
1 Tbsp. Tacky glue
Mix in bowl and stir until well blended. Work mixture in hands for three minutes to form
a ball. If it is too dry, add applesauce, if too wet, add more cinnamon.
Knead ball on cinnamon-sprinkled surface until it holds together well.
I roll this out and use cookie cutters for the shapes. I also use a drinking straw to cut a
hanging hole.
These can be air dried for 24 to 48 hours.
Turn several times.
They can also be baked in a oven on LOW.

EASY Apple Cinnamon Ornie recipe

What you do:
COMBINE 3/4 CUP OF APPLESAUSCE AND 1 1/4 CUPS OF GROUND CINNAMON.
BLEND WELL.
WORK DOUGH WITH HANDS TO A SMOOTH, CLAY LIKE CONSISTENCY.
DUST WORK SURFACE AND ROLLING PIN WITH CINNAMON.
ROLL DOUGH TO 1/8" THICK.
CUT WITH COOKIE CUTTERS.
MAKE HOLES FOR HANGING WITH A TOOTHPICK OR STRAW.
BAKE ON COOKIE SHEET (I FIND IF YOU VERY LIGHTLY GREASE YOUR PAN
THE DOUGH DOES NOT STICK TO THE PAN) AT 170 F FOR 1 HOUR.
TURN OFF HEAT AND LEAVE SHAPES IN OVEN 5 HOURS TO COOL SLOWLY

IF YOU WISH YOU CAN SEAL COOKIES WITH 3 COATS OF CLEAR ACRYLIC
AND DECORATE WITH COLORFUL ACRYLIC PAINT

Teriyaki Pork Tenderloin in a crock pot

Figure today is a perfect day to make one of my Pork Tenderloin's and I figured I would share my recipe.

Now some people might like to brown their Tenderloin's first, but I don't. I want it to soak up all the goodness in the crockpot bath so it is up to you if you want to brown it first :)

What you need:

1-2 pounds pork tenderloin ( I actually use a Teriyaki based one I bought at the commissary that is just over a pound)
1/2 cup teriyaki sauce
1 cup chicken broth (don't have broth, use 1 chicken bullion cube to one cup water)
1/4 cup brown sugar
4 cloves garlic, chopped (I am lazy and have minced garlic in a jar I keep in the fridge so I use a teaspoon)
1 teaspoon of crushed red pepper flakes
1/2 large onion, chopped
1/4 teaspoon black pepper


What to do:

Put your tenderloin into crock pot, cover with the teriyaki sauce mixture. Cook on High for about 4 hours, or low for 6 to 8 turning 2 to 3 times during the cooking time to ensure even doneness and to get them juices soaked in.

Remove tenderloin from the crock pot and let rest for 5 minutes before slicing which it pretty much just falls apart so slice or shred it..either way it still taste the same!
If desired, spoon liquid over slices when serving OR you can thicken it up with a little cornstarch and make a gravy to spoon over this. I serve mine with rice. MM MM

MOIST BANANA NUT BREAD..Mm Mm Mm

SHew, after an exhausting day climbing up Stone Mountain I decided to make some Banana Nut Bread.
What made me think to make it was,  I went to go grab a banana to eat cause I figured after all that hiking I will surely get leg cramps tonight so I need to get some potassium in me. HA..the Banana's were really really ripe..so instead of throwing them out...Moist Banana Nut Bread!

The recipe: 
Gena's BANANA NUT BREAD 

1 1/2 cups sugar
1/2 cup butter
2 eggs
1/4 teaspoon baking powder
1/2 teaspoon baking soda
1 1/2 cups flour
3 large very ripe bananas, mashed
1/2 cup nuts, chopped
1 teaspoon vanilla extract

Blend together sugar, butter, and eggs. Add dry ingredients, which have been sifted together. Add mashed bananas, chopped nuts, and vanilla extract. Pour into a greased loaf pan.
Bake at 375°F degrees for 1 hour.
Brush top with melted butter or glaze with confectioners icing, if desired, while loaf is still warm.
Confectioners' Sugar Glaze Icing

1¼ cups Confectioners' Sugar
3 tablespoons Milk
½ teaspoon Clear Vanilla Extract

Stir milk into sugar. Add vanilla. Drizzle onto baked item(s).
May be thickened with confectioners' sugar or thinned with milk or other flavored liquids
.Makes: About ½ cup of icing.
What a great bread to make on a cool afternoon! Ahhh the house smells sooo good too while this is cooking.
